Cellar Master - Ridge/Monte Bello

Overview

The role of Cellar Master at Ridge/Monte Bello involves all aspects of wine production from crushing to bottling. The primary responsibility of this position is to direct, manage and motivate a cellar crew of seven full-time workers and occasional seasonal cellar staff.

Other key duties include writing winemaking work orders as directed by the Monte Bello (MB) Winemaker, entering completed work orders into Winemaker Data Base (WMDB), operating and directing others to operate, winemaking equipment such as presses, pumps, filters and bottling equipment. 

The ability to communicate in both English and Spanish is essential. The position is responsible for ensuring that work-orders and winemaking protocols are understood and properly carried out. The Cellar Master is an important member of the overall Ridge Production team, ensuring that all wine work is performed at the highest quality standards to meet production goals. For this reason, we are looking for someone who is both passionate and curious about wine.

Specific Duties

  1. Continuous Duties:
  • Daily coordination with MB Winemaker, scripting work orders and entering finished work orders into WMDB
  • Fermentation tracking with daily Brix and temperature readings and charting. 
  • Wine additions including the ability to calculate target parameters.
  • Implement and verify new SOPs for sanitation, wine movements, topping, racking, additions, barrel maintenance, filtrations, etc. as to MB Winemaker parameters.
  • Maintain stock of and order as necessary supplies for sanitation and standard equipment such as wine hoses, clamps, filter pads, etc. 
  • Insure that safety standards are being adhered to and that all crewmembers use sufficient safety gear. Coordinate regular schedule with Director of Human Resource for safety classes, assure safety gear is available.
  • Coordinate, with the MB Winemaker, should revisions to winemaking procedures be needed to adapt to changes in quality control, handling, and useful technologies that accentuate our traditional winemaking approach to gain higher wine quality.
  • Distribute, verify and send to Payroll hourly time sheets for Cellar crew. 

 

  • Maintain topping, racking, gassing of partial tanks and barrel maintenance schedules.
  • Maintain and reconcile monthly bulk wine inventory, immediately report any unexpected losses to MB Winemaker.

2. Bottling:

  • Familiarity with bottling equipment set-up, sanitation, and bottling protocol for all bottle formats.
  • Insure that the proper bottling filtration process is prepared/followed.
  • Confirm all bottling dry goods are received prior to bottling.

3. Harvest

  • Assist with grape reception, inspection and sorting, crush and/or whole cluster pressing operations.
  • In conjunction with MB Winemaker and Lab Manager, monitor and track all fermentations

REQUIREMENTS / QUALIFICATIONS

  • Minimum 5 years of experience in wine production including running a press, plate and frame filter and crush equipment.
  • Computer literacy in MS Excel, Word, Outlook. WMDB experience a plus.
  • Ability to Lift 50+ lbs.  
  • Ability to work in cold, humid environment for lengthy periods of time
  • Ability to work in hot, dry conditions outdoors following protocols for heat illness prevention
  • Ability to work around high noise levels following hearing protection protocols
  • Ability to work around machinery, electrical, hot water, steam, wine sanitation chemicals.
  • Available to work during harvest schedule, which will exceed 40hrs a week, includes being available on Saturday or Sunday, or both depending on pace of harvest.
  • Ability to communicate in English and Spanish-Must Have.
